Chocolate Heart
Sandwich Cookies for Valentine's Day!

Another special
treat just in time for Valentine's Day! These wonderful chocolate cake like
cookies contain an orange flavored cream filling and are shaped into hearts just
for this special holiday. If you don't have a heart shaped cookie cutter, you
can also use a round one or any other shape desired.
Ingredients:
2 1/2 c. flour, all-purpose
3/4 c. cocoa powder
1 tsp. baking powder
1/4 tsp. salt
3/4 c. butter, softened
1/2 c. light brown sugar
1/2 c. sugar
2 eggs
2 tsp. vanilla extract
Filling:
2 1/4 c. confectioners sugar
1/3 c. vegetable shortening
3/4 tsp. grated orange rind
3 T. orange juice
Directions:
* Preheat oven to 375 degrees. Mix first 4 ingredients together in a small bowl.
* Cream together butter and sugars until smooth, then beat in vanilla and eggs,
one at a time.
* Slowly beat in flour mixture until combined well.
* Roll half of dough out onto floured surface, to 1/8-inch thick. Cut cookie
layers out with 1 3/4-inch heart shaped cutter, or round one if you don't have a
heart shape.
* Transfer each cookie layer onto an ungreased baking sheet and bake for 8-10
minutes. Roll the remaining dough out and repeat steps to cut and bake, cooling
on a wire rack when they're done.
* For the filling, beat ingredients together and spread 1 tsp. on half of the
cookies, then sandwich together with another cookie on top.
* Let set for 30 minutes, makes 4 dozen cookies.
