Chocolate Orange Ooze Cupcakes
by Kathryn Martinez

Here's another fun treat for the fall season or an autumn celebration. These never last long around my house and the kids get a kick out of saying they made them themselves.

Ingredients:

8 oz. Cream cheese softened
1 Egg
1/3 Cup Sugar
Yellow and red food coloring
1 pkg Chocolate cake mix

Directions:

1. Prepare cake mix as directed on box for cupcakes, until it comes to baking.
2. To make filling: Combine cream cheese, egg and sugar.
3. Blend in 2 drops yellow food coloring and 1 drop red food coloring, adding more coloring if necessary to reach desired shade.
4. Fill cupcake liners half full with cupcake batter, then place 1 teaspoon filling at center of each.
5. As cupcake bakes, the batter will rise to surround the filling.
6. Bake at 350 degrees F for 25 about 25 minutes.
